How we cook the wings (the actual process)
Every order is dredged dry, dropped into clean oil, and pulled when the skin shatters under a tap. Then they hit a stainless bowl, get a ladle of whichever house sauce you ordered, and a hard toss until the sauce is on the wing instead of pooled at the bottom. That's why they show up glossy instead of soggy. Bone-in only for the classic basket — the boneless basket is hand-breaded thigh meat, not a frozen nugget. Celery, carrots, and ranch or blue cheese come standard, and we'll sub extra dressing for free if you ask. Heat builds across the basket; if you want a true mouth-burn, ask for the rotating heat special and tell the bartender you mean it.

- Buffalo — the default. Real vinegar + cayenne + butter. Medium heat, classic finish.
- Garlic parmesan — toasted garlic, hard parm, a glossy coat. Mild, the most-ordered with a burger to share.

- BBQ — house BBQ, smoke-forward, not sweet.
